It all started …
Forty years ago Quality Packers was a processor supplying meats wholesale to the grocers and restaurants around the Victoria region. Thomas Limon II, the grandfather of siblings Victoria and Christina, the current owners, was known for his generosity and business as much as his cooking. In 1968, years before the processing business opened, their great-grandfather attended the 1968 World’s Fair in San Antonio. There he purchased a revolutionary rotisserie barbecue pit – an original Herbert Oyler, one of only a few made before the untimely passing of Herbert.
Their great-grandfather eventually sold the pit to Thomas, who in turn began Quality Packers processing plant. From there they used the Herbert Oyler pit for private catering. They are now a fifth generation family-operated barbecue known as QP Smokehouse.
You can taste the special style in their beef brisket. It’s a fantastic, evenly, slow-cooked rack that has a unique consistency throughout and flavoring from their mix of mesquite, oak and pecan woods. This brisket is something that even the most die-hard barbecue enthusiast must try to get a feel for their different cooking style.
The sides at QP Smokehouse are great accessories to their meat. The German potatoes are a gem to find for a barbecue side dish and after tasting them at QP you’ll want them everywhere. For dessert, they rotate various types of cobblers – all of which are made from scratch and accordingly delicious.
