When they first opened in early 2012, The Fire Pit was run out of a house so that the owner, Robert Harris, could learn everything he could about the business. Robert owned a meat processing facility for years, so for him a transition down the food chain made sense and it would allow him to share his passion for interacting with the public. His friend, Brenda Janecek, an employee at Maggie’s Meat Market for twenty-five years before they closed, works for him at The Fire Pit and together they’ve carried on the legacy from that iconic restaurant by offering the famous chicken salad and other menu items.
Their restaurant is a food truck that’s regularly parked in front of a strip mall on a busy corner and his dream is to see five of them serving different locations across the Coastal Bend. When asked about some of the famous people he’s served Robert responds “I feel that all of my customers are special; I derive great pleasure putting smiles on all of their faces.” This response summarizes Robert’s way of doing business; it’s about more than the barbecue to him. He wants the experience to be so great that everyone becomes long-time customers.
The brisket and rib plate is The Fire Pit’s flagship meal, and it’s clear why with a woody flavor from their low and slow cooking process over mild pecan wood. On top of the regular barbecue they offer an assortment of wonderful light plates making this a great stop for a group of folks with different tastes. The famous chicken salad is well-known from being perfected and served for half a century at Maggie’s.
